Sunday Baking Sunday # 3

Leaving it to the last minute as usual last night I text my mum and asked for my aunties chocolate cake recipe.

Here is the recipe we've been using for years

Sunday Baking Sunday

This Sunday I made:

Julie's Moist Chocolate Cake

2 cups of sugar in my "mixing bowl"

2 cups of flour

6 tablespoons of cocoa

4-5 eggs (I used 5)

1 cup of milk

Mix it all up

Add 3/4 of a cup of melted butter

Mix again

I made 12 muffins and put them in the oven at 200°C for 20 minutes

And this is what we ended up with

Chicken Nuggies

After a recommendation from some of the wonderful ladies on my Online Mothers Group (OMG), today I decided to make Chicken and veggie nuggets. So I can freeze them up for Nazs lunches.
Here's the recipe so you can try it!
I grated up some zucchini and carrot, threw in some minced chicken, way too much corn and an egg.
Hot Tip: don't add too much corn like me, it makes it harder to get the mixture to stick together.

Then roll up tablespoons of the mixture and roll it in some breadcrumbs.

Rack 'em up

And chuck it in the pan

The more the merrier!

Then I put them in the oven for 10 minutes to cook them through and then that's lunch done for the next year!

Stewing over the little things

So I've been mulling over my life, stewing if you will.

Why does the baby awaken so often during the night lately?

Why is squealing his current favorite activity?

Why are there so many tvs in the hard rubbish collection on my street? I'm talking millions of tvs on the grass people!

Add to that couches and random broken chairs (and my old curtains muwahahahhaah)

Why did I call my mum overseas for 43 minutes without realizing?

Back to the stewing. I stewed some plums!

I've been setting up my new home and baking just wasn't on the hozion.

The Nitty Gritty

Let's just get it all out on the table. We're all friends here and honesty is the best policy.

Moving. Sucks.

Moving on your own with an 11 month sucks more. Trying to get things sorted during nap times is hard work man!

I spent two days worth of naps "building" this

It's a set of drawers from Ikea. I was so proud of myself for finishing it and then that one drawer had to go and wreck it for everyone. Now I have to take the drawer apart and "rebuild" it. I still have a wardrobe to "build" too.

Green carpet in the city for St. Patrick's day. Naz and I strolled along it like we were actual leprechauns.

All that leprechauning tired the poor little mite out!

Sunday Baking Sunday # 2 1/2

Continuing On...
Day Two

I sneakily had a quick look at the Choc Fudge Ice cream and here it is patiently waiting for me to eat it tomorrow possibly for breakfast

It didn't turn out like super frosty cold ice cream. It turned out exactly like YoGo. Remember YoGo? Delicious, but NOT ice cream.

So the moral to this story is: If you want to blog about making ice cream, test first before posting anything.

Can anyone please give me any reasons why it didn't freeze?

Sunday Baking Sunday # 2

Day One

This Sunday I went to the Fremantle Markets with my sister Jade. Where I found and subsequently purchased these beauties.

So expect to see them guest starring in my posts from now on!
Sunday Baking Sunday
This Sunday I made:
Chocolate Fudge Ice cream
Jade whose blog you can see here sent me a link to this blog, with a recipe for Mocha Fudge Ice cream. It looks amazing!
I have slightly varied the recipe in that I made it with no coffee, hence no mocha in the title.
Now, I've never made ice cream before and am a complete rookie. But stick with me and together we might make something excellent and tasty!
Please keep in mind that this is the weather today in Perth

(106° Fahrenheit)
So going and buying ice cream would have been easier and involved less time standing in front of the stove stirring! BUT I am committed!

Ingredient roll call

Chop your chocolates and get your cocoa sorted

Yum sweetened condensed miiiiilk!

Put double cream, milk and sweetened condensed milk into a saucepan
Stir stir stir

Keep stirring for centuries until you see bubbles around the edge

Add in chocolates and cocoa. Stir until melted and combined.

Pour into a container with a lid and allow to cool.
Refrigerate for an hour and then freeze overnight. This is where I'm up to and will post the finished product tomorrow.

Sunday Baking Sunday # 1

Sunday is traditionally the day of wishing you used your weekend better and not wanting to go back to school/work/jail tomorrow.
Well let's turn that frown upside down and start a weekly baking post on your (my) blog! That way we'll all have something to look forward too. Well, that and gorging oneself on said baked good.
Sunday Baking Sunday
This Sunday I made:
Baked Vanilla Cheesecake
Now who doesn't love a baked cheesecake? No one. Zero hands are raised. And that's because its always a crowd pleaser.
I used this recipe but have changed it slightly. And by that I mean we didn't quite have 300grams of sour cream.

Get your ingredients together. How easy is that? There's like 5 things!

Grease and baking paper your springform pan.

Marie biscuits into processor, ready to be smashed into smithereens. (smithereens is a word? Who knew!)

See? Smithereens.

Add your melted butter.

Process again, push into prepared tin, bring the base right up the sides. And chill (I put it into the freezer)

Start the filling with a clean processor bowl

Throw in your cream cheese, sugar and sour cream.

And process. Looks like ice cream doesn't it?!

Add eggs and vanilla

Now we're talking

Pour into chilled base


Once it's finished baking, leave it in the oven until completely cooled. This stops it from cracking.

Sliiiiiightly sunken in the middle, but that's no biggie

Serve that baby up!
